4 Minute Coconut Curry Chicken (InstantPot Recipe)

Quick, easy and delicious coconut curry chicken in under 5 minutes! Yes, Please!

Yields1 Serving
 2 Large Frozen Chicken Breasts
 13 fl oz (1 can full fat) Coconut Milk
 3.50 tsp Curry Powder
 ½ tsp Salt
 ½ tsp Black Pepper
  tsp Cayenne Pepper (more to taste. careful!)
 1 tsp (optional) Arrowroot Powder (to thicken)
 1 (optional) Bag of Frozen Diced Peppers and Onions

Place all ingredients except for arrowroot powder into InstantPot

Set to High Pressure for 30 minutes.

Quick release, stir in optional arrowroot powder, shred or dice the chicken

Serve over rice with plenty of sauce covering for more flavor!
