BBQ Chicken Nachos (InstantPot or Slow Cooker)

 2 Frozen Chicken Breasts
 1 Bottle BBQ Sauce (I suggest True Made Foods from Sprouts)
 1 Bag Tortilla Chips (I suggest Late July Organic Sea Salt GF Multigrain)
 1 cup Shredded Cheese - your choice (For dairy-free, I suggest Miyoko's MOZZ - it's the only DELISH vegan "cheese" I've found)

Place frozen chicken and 1/2 bottle of bbq sauce into Instant Pot or Slow Cooker.

Set Instant Pot to high pressure for 30 minutes & instant release when done. For Slow Cooker, set to low for 4-6 hours or high for 3-4 hours.

Shred chicken, and add more bbq sauce to taste.

Lay out a single layer of tortilla chips onto a sheet pan. Sprinkle shredded BBQ Chicken, then shredded cheese on top of the chips.

Broil for 3-5 minutes (watching carefully - they burn QUICKLY) until cheese is melted perfectly.

Serve immediately drizzling any extra BBQ Sauce, Sour Cream on top as desired and served with optional toppings such as guacamole, salsa, extra sour cream, fresh cilantro, etc. (Warning: the kids will ask for seconds and thirds of this meal)
