Kid-Approved, Quick Veggie Chili

Yields10 Servings
 2 lbs Ground Meat (the test recipe used turkey)
 3 tsp Cumin
 1 ½ tsp Salt
 1 ½ tsp Black Pepper
 1 ½ tsp Oregano
 1 ½ tsp Garlic Powder
 1 ½ tsp Onion Powder
 ½ tsp Chili Powder
 14 oz (1 reg. can) Canned, Sliced Carrots
 28 oz (or 2 reg. cans) Diced Tomatoes (no sodium added. fire roasted for even better flavor)
 6 oz (or 1 small can) Tomato Paste (no sodium added)
 14 oz (or 1 reg. can) Tomato Sauce (no sodium added)

In 6 quart (or larger) soup pot, brown 2lbs ground meat over medium high heat using a ground meat chopper to make it easier to reach an even texture.

Lower heat to medium low (or lower if it bubbles too much). At this point, the heat is simply to keep the chili warm before serving.

Drain liquid from pot, then add all additional ingredients (drain the carrots and diced tomatoes first).

Best part of this meal? You can get several meals out of this one recipe! Make enough to feed your family plus have leftovers for at least 1 meal of Chili Dogs and 1 meal of Frito Chili Pie. All you need to purchase (other than the chili toppings) in order to have these THREE meals are:
